  • 2 pounds ground chicken
  • 1.5 cups Panko breadcrumbs
  • 4 count green onions, thinly sliced
  • 2 teaspoons minced garlic
  • 1 teaspoon coarse salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons buffalo sauce
  • Additional buffalo sauce for tossing
  • Ranch dressing for serving

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • In a large bowl, gently combine the ground chicken, Panko breadcrumbs, sliced green onions, minced garlic, salt, pepper, and buffalo sauce. Mix until just combined.
  • Using your hands, roll the mixture into 1 1/2-inch meatballs and place them on the prepared baking sheet.
  • Bake the meatballs for 15-20 minutes, or until they reach an internal temperature of 165°F (74°C).
  • Transfer the meatballs to a large bowl and toss with additional buffalo sauce to coat.
  • Serve immediately with ranch dressing on the side.

Notes

For a milder flavor, reduce the amount of buffalo sauce or serve with extra ranch dressing. Feel free to add some shredded cheese to the meatball mixture for an extra cheesy twist!
