Ingredients

  • 4 flour tacos
  • 1 tbsp olive oil
  • 1 small red onion diced
  • 2 garlic cloves minced
  • 1 small red pepper diced
  • 1 can 400g white beans, drained and rinsed
  • 3 tbsp buffalo hot sauce
  • 100 g sour cream
  • 1 tsp smoked paprika
  • 0.5 tsp cayenne pepper
  • 0.5 tsp dried oregano
  • 0.5 tsp cumin
  • Salt and pepper to taste
  • 150 g shredded cheddar and mozzarella cheese
  • 10 g cilantro finely chopped

Instructions
 

  • In a frying pan over medium heat, add olive oil, diced onion, and red pepper. Sauté for 5-6 minutes until the vegetables are softened.
  • Add minced garlic and cook for another minute until fragrant.
  • Stir in the rinsed white beans and buffalo hot sauce. Mix well to combine all the ingredients.
  • For a creamier texture, use a wooden spoon to mash down about ⅓ to ½ of the white beans, thickening the sauce.
  • Lay each taco in the pan to moisten with the sauce. Fill half of each taco with the white bean mixture and top with shredded cheese.
  • Fry the tacos for 2 minutes on each side or until crispy and golden brown.
  • Sprinkle chopped cilantro over the tacos before serving for an added burst of freshness.
  • Serve with extra sour cream for dipping.

Notes

For added freshness, top with diced tomatoes or avocado slices.
