Instructions
In a frying pan over medium heat, add olive oil, diced onion, and red pepper. Sauté for 5-6 minutes until the vegetables are softened.
Add minced garlic and cook for another minute until fragrant.
Stir in the rinsed white beans and buffalo hot sauce. Mix well to combine all the ingredients.
For a creamier texture, use a wooden spoon to mash down about ⅓ to ½ of the white beans, thickening the sauce.
Lay each taco in the pan to moisten with the sauce. Fill half of each taco with the white bean mixture and top with shredded cheese.
Fry the tacos for 2 minutes on each side or until crispy and golden brown.
Sprinkle chopped cilantro over the tacos before serving for an added burst of freshness.
Serve with extra sour cream for dipping.
Notes
For added freshness, top with diced tomatoes or avocado slices.
