  • 1 lb ground turkey
  • 1 each butternut squash, about 3 cups cubed
  • 0.5 cup vegetable broth
  • 1 tbsp olive oil
  • 1 small white onion, diced
  • 2 cloves garlic, minced
  • 1 each red bell pepper, chopped
  • Salt and pepper, to taste
  • 1 tsp smoked paprika
  • 0.75 cup gruyère cheese
  • Fresh cilantro and parsley for garnish

Instructions
 

  • In a cast iron skillet, heat the olive oil over medium heat. Add the ground turkey, diced onion, minced garlic, and chopped bell pepper. Sauté until the meat is no longer pink and the vegetables are tender, about 5-7 minutes. Season with salt, pepper, and smoked paprika.
  • Stir in the cubed butternut squash and vegetable broth. Mix well to ensure most of the squash is submerged in the broth. Cover the skillet and reduce the heat to medium-low. Cook for about 12 minutes, or until the butternut squash is soft.
  • Remove the skillet from the heat and sprinkle the gruyère cheese evenly over the top. Preheat your oven to 400°F (200°C) and bake for about 5 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh cilantro or parsley before serving.

Notes

For added flavor, consider mixing in some spices like cumin or chili powder. You can substitute the gruyère cheese with any cheese of your choice if desired.
