  • 1 cup tomato sauce
  • 1 pound lean ground beef
  • 1 medium cabbage cored and boiled until leaves are soft
  • 5 cloves garlic minced
  • 1 medium onion finely diced
  • 0.5 cup ricotta fresh
  • 1 large egg optional
  • 0.33 cup grated Parmigiano cheese
  • 0.5 cup water
  • 1 tablespoon tomato paste
  • 0.5 cup Mozzarella grated, for topping
  • 3 leaves basil optional
  • 1 pinch salt to taste
  • 1 pinch salt to taste
  • 1 piece Parmigiano rind optional

Instructions
 

  • Prepare the cabbage by boiling it in salted water until leaves are soft, then drain and cool.
  • In a pan, cook the ground beef over medium-high heat until browned, about 8-10 minutes.
  • Add chopped onion, minced garlic, and salt; sauté until onion is translucent, about 1-2 minutes.
  • Stir in tomato paste and cook for 1 minute; then add tomato sauce, water, and optional Parmigiano rind. Let simmer for 10 minutes.
  • Mix ricotta, optional egg, grated Parmigiano, basil, and a pinch of salt in a bowl.
  • Begin layering in a baking dish: meat sauce, cabbage leaves, ricotta mixture, and sprinkle mozzarella.
  • Repeat layers until all ingredients are used, finishing with mozzarella on top.
  • Preheat oven to 400°F (200°C) and bake uncovered for 30 minutes, then broil for 2-3 minutes until golden.
  • Let rest for a few minutes before serving.

Notes

Feel free to add your favorite herbs or spices to the meat sauce for extra flavor. You can substitute the ricotta with cottage cheese for a lighter option.
