  • 2 pounds boneless, skinless chicken thighs about 6-8 thighs
  • 2 teaspoons brown sugar
  • 1 teaspoon Cajun seasoning
  • 0.5 teaspoon ground paprika
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper
  • 3 tablespoons unsalted butter divided
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 tablespoon lime juice from ½ lime
  • 0.33 cup low-sodium chicken broth
  • 1 tablespoon chopped fresh parsley optional, for garnish

Instructions
 

  • In a small bowl, mix together the brown sugar, Cajun seasoning, paprika, garlic powder, salt, and black pepper. Pat the chicken thighs dry with paper towels and sprinkle the seasoning mixture evenly over them.
  • In a large skillet, melt 1 tablespoon of butter along with the olive oil over medium-high heat. This combination helps to achieve a nice sear on the chicken.
  • Add the seasoned chicken thighs to the skillet and sear them for 5-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C). Once cooked, transfer the chicken to a plate. This step adds depth of flavor!
  • Lower the heat to medium and add the remaining 2 tablespoons of butter to the skillet. Once melted, add the minced garlic and sauté for about 30 seconds, or until fragrant. This enhances the dish with aromatic garlic goodness.
  • Stir in the lime juice and chicken broth, scraping up any brown bits from the bottom of the pan. Let the sauce simmer for 1-2 minutes, whisking often. These brown bits are packed with flavor!
  • Return the chicken to the skillet, spoon the sauce over the top, and allow it to warm through for a minute before serving. If desired, garnish with chopped fresh parsley for a pop of color and freshness.

Notes

For a little extra kick, feel free to add more Cajun seasoning to taste. Serve this dish with rice or a fresh salad for a complete meal.
