Ingredients
  

  • 1/2 pound smoked sausage sliced into rounds
  • 1 medium onion chopped
  • 1 medium green pepper chopped
  • 2 celery stalks chopped
  • 1 clove garlic minced
  • 1 can 14.5 ounces diced tomatoes
  • 1 can 14.5 ounces chicken broth
  • 2-3 cups chopped cabbage
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Cajun seasoning
  • 1/2 pound beef sausage
  • 1/2 cup long grain rice

Instructions
 

  • In a skillet, cook the beef sausage, smoked sausage, onion, green pepper, celery, and garlic until the sausages are cooked through.
  • Add the diced tomatoes, chicken broth, cabbage, salt, black pepper, Cajun seasoning, and rice. Let it simmer uncovered for 35-40 minutes until the rice and cabbage are tender.
  • Serve hot. This recipe yields about 8 servings.
