Ingredients

  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsp chili powder
  • 2 tsp thyme
  • 2 tsp oregano
  • 1 tsp cayenne pepper
  • 1 yellow onion diced
  • 2 bell peppers diced
  • 3 stalks celery diced
  • 4 chicken breasts
  • 6 pieces bacon sliced
  • 2 cups white rice
  • 4 cups chicken stock
  • 2 lemons
  • 1/3 cup tomato paste
  • 1/2 cup heavy cream
  • 4 cloves garlic diced

Instructions
 

  • In a small bowl, mix together the smoked paprika, garlic powder, onion powder, and chili powder. Set this seasoning blend aside for later use.
  • Season the chicken breasts with half of the Cajun seasoning and add salt and pepper to taste.
  • In a skillet over medium-low heat, add the diced bacon. Cook for about 10 minutes, stirring occasionally, until the bacon is crispy and has rendered its fat.
  • Add 1 tablespoon of butter and a drizzle of olive oil to the skillet with the bacon. Increase the heat to medium. Add the seasoned chicken breasts and sear for about 3 minutes on each side until golden brown. Remove the chicken from the skillet and set aside on a plate.
  • In the same skillet, add the diced onion, bell peppers, and celery. Season with salt, pepper, and a teaspoon of the Cajun seasoning. Cook for 3-5 minutes until the vegetables soften and become fragrant.
  • Stir in the white rice, then pour in the chicken stock. Squeeze the juice of one lemon over the mixture. Return the seared chicken to the skillet. Bring everything to a boil, then cover with a lid and reduce the heat to a simmer. Cook for 15-20 minutes until the rice is tender.
  • In a separate saucepan, combine the heavy cream, diced garlic, tomato paste, and the remaining Cajun seasoning. Heat over low until the mixture thickens. Squeeze the juice of the second lemon into the sauce and whisk to combine.
  • Once the rice is cooked, pour the sauce over the chicken and rice mixture. Gently mix everything together, slice the chicken, and toss to combine.

Notes

For a spicier kick, feel free to add more cayenne pepper to the Cajun seasoning.
