  • 12 lasagna noodle sheets
  • 1 lb 450g cooked chicken breast, diced or shredded
  • 1 block 8 oz cream cheese, softened
  • 1.5 cups 360g ricotta cheese
  • 2/3 cup 90g frozen chopped spinach, defrosted and well-drained
  • 4 oz 115g sun-dried tomatoes, strained and chopped
  • 1 tablespoon Cajun seasoning
  • 2.5 cups 300g shredded cheddar and mozzarella cheese, divided
  • 4 tablespoons butter
  • 4 cloves garlic minced
  • 1 cup 240ml heavy cream
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • 1/2 cup 50g grated parmesan cheese
  • Cajun Seasoning or use store-bought:
  • 2 tablespoons mild paprika
  • 3/4 teaspoon salt
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons chili powder
  • 1.5 teaspoons dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon brown sugar
  • 3/4 teaspoon cayenne pepper adjust for heat
  • 1/2 teaspoon cracked black pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish.
  • In a large bowl, combine the ricotta cheese and cream cheese. Mix until smooth. Add the sun-dried tomatoes, spinach, Cajun seasoning, chicken, and 1 cup of the shredded cheese. Fold until well combined.
  • Cook the lasagna noodles according to package instructions until al dente.
  • In a saucepan over medium-low heat, melt the butter and sauté the minced garlic until fragrant.
  • Pour in the heavy cream and whisk in the Cajun seasoning and parmesan cheese. Simmer for 5-6 minutes, stirring occasionally, until the sauce thickens slightly.
  • Spread a few spoonfuls of the Alfredo sauce in the bottom of the greased casserole dish.
  • To assemble the lasagna rolls, scoop about 2/3 cup of the filling onto one end of each cooked lasagna sheet. Roll them up tightly and place seam-side down in the baking dish.
  • Pour the remaining warm Alfredo sauce evenly over the rolls, ensuring to cover any exposed areas. Sprinkle the remaining 1.5 cups of shredded cheese on top.
  • Bake uncovered for 35 minutes, or until the edges are crisp, bubbling, and the top is golden brown.

Notes

For a vegetarian option, you can omit the chicken and add more vegetables like mushrooms or zucchini. Feel free to adjust the amount of Cajun seasoning based on your spice preference.
