Ingredients
  

Main Ingredients

  • 3 breasts chicken breasts, cut into small strips
  • 3 tbsp Cajun seasoning (use ½ tbsp if spicy)
  • 1 tsp salt
  • 1 tbsp olive oil
  • 0.5 tbsp butter
  • 1 large onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp chopped sun-dried tomatoes
  • 1 tbsp tomato paste
  • 1 cup orzo pasta
  • 1 cup chicken broth or stock (240ml)
  • 1 cup shredded spinach (30g)
  • 0.25 cup heavy cream (60ml)
  • 3 tbsp grated parmesan cheese
  • 1 tbsp extra parmesan to serve

Instructions
 

  • In a bowl, mix the chicken strips with Cajun seasoning and salt.
  • Heat olive oil and butter in a large pan over medium heat. Add the seasoned chicken and cook until it starts to brown, about 5-7 minutes, stirring occasionally.
  • Add the diced onion, minced garlic, sun-dried tomatoes, and tomato paste to the pan. Cook over low heat for 5 minutes, stirring often.
  • Stir in the orzo and cook briefly for about 1 minute. Then, pour in the chicken broth. Bring to a simmer, cover, and cook for about 20 minutes, stirring occasionally.
  • Uncover and check the orzo for doneness; it should be almost tender. Add the shredded spinach and let it wilt for about 2 minutes.
  • Pour in the heavy cream and add the grated Parmesan. Stir well to create a creamy sauce. Adjust seasoning as needed based on your taste preference.
  • Serve the dish with extra Parmesan on top for an added flavor boost!

Notes

Feel free to add more vegetables like bell peppers or mushrooms for extra flavor and nutrition.
