thinly sliced (or mini sweet peppers)

small chicken breasts

cold cream cheese
sliced into 8 slices

shredded cheddar cheese
Instructions
Preheat your oven to 375°F (190°C).
In a small bowl, mix paprika, cayenne pepper, oregano, thyme, and salt to create the Cajun seasoning.
Spread the thinly sliced bell peppers on the bottom of a casserole dish.
Place the chicken breasts on top of the bell peppers.
Sprinkle the Cajun seasoning generously over the chicken breasts.
Add minced garlic on top of the seasoned chicken.
Lay 2 slices of cream cheese on each chicken breast.
Sprinkle shredded cheddar cheese over the chicken.
Bake the chicken uncovered in the preheated oven for 20-30 minutes until the chicken is fully cooked.
For a golden finish, broil the dish for 2 minutes if desired.
To serve, scoop the bell peppers from underneath the chicken and arrange them around and on top of the chicken.
Notes
For a spicier kick, increase the amount of cayenne pepper in the Cajun seasoning.
