Cajun Chicken With Sweet Bell Peppers

Ingredients
  

  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon oregano
  • 1/4 teaspoon thyme
  • 1/4 teaspoon salt
  • 2 small bell peppers thinly sliced (or mini sweet peppers)
  • 4 small chicken breasts
  • 4 cloves garlic minced
  • 6 oz cold cream cheese sliced into 8 slices
  • 1/2 cup shredded cheddar cheese

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, mix paprika, cayenne pepper, oregano, thyme, and salt to create the Cajun seasoning.
  • Spread the thinly sliced bell peppers on the bottom of a casserole dish.
  • Place the chicken breasts on top of the bell peppers.
  • Sprinkle the Cajun seasoning generously over the chicken breasts.
  • Add minced garlic on top of the seasoned chicken.
  • Lay 2 slices of cream cheese on each chicken breast.
  • Sprinkle shredded cheddar cheese over the chicken.
  • Bake the chicken uncovered in the preheated oven for 20-30 minutes until the chicken is fully cooked.
  • For a golden finish, broil the dish for 2 minutes if desired.
  • To serve, scoop the bell peppers from underneath the chicken and arrange them around and on top of the chicken.

Notes

For a spicier kick, increase the amount of cayenne pepper in the Cajun seasoning.
