  • 2 tablespoons mayo
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon cayenne pepper
  • 1 tablespoon apple cider vinegar
  • 1 pound chicken thighs, diced
  • 1 cup mayo
  • 1 large spoonful sour cream
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 0.25 teaspoon black pepper
  • 1 pinch salt
  • 8 whole whole wheat or regular flour tortillas
  • 2 cups chopped romaine lettuce
  • 1 cup diced tomatoes
  • 1 whole avocado, thinly sliced

Instructions
 

  • In a bowl, mix together the mayo, salt, smoked paprika, garlic powder, black pepper, onion powder, oregano, cayenne pepper, and apple cider vinegar. Add the diced chicken thighs and coat well. Marinate for 30 minutes or use immediately for a quicker preparation.
  • Heat a large sauté pan over medium heat. Add the marinated chicken to the pan, flatten each piece, and cook undisturbed for 5-7 minutes.
  • Flip the chicken, flatten again, and cook for another 5-7 minutes until the chicken is fully cooked.
  • Roughly chop the chicken in the pan while cooking, ensuring it’s fully cooked, which should take about 7-10 minutes total. Remove the chicken from heat once done.
  • For the creamy dressing, mix together the mayo, sour cream, apple cider vinegar, black pepper, smoked paprika, garlic powder, oregano, and a pinch of salt in a bowl until combined.
  • Warm the tortillas in the microwave for 10-15 seconds to make them easier to roll. Spread a spoonful of the mayo sauce on each tortilla.
  • Top each tortilla with the cooked chicken, chopped romaine lettuce, diced tomatoes, and avocado slices. Drizzle with more sauce, fold tightly, and serve immediately.
