  • 13 oz beef sausage links, sliced into medallions
  • 6 oz fresh baby bella mushrooms, cleaned and thinly sliced
  • 0.5 medium red bell pepper, stemmed, seeds removed, and thinly sliced
  • 0.5 medium yellow bell pepper, stemmed, seeds removed, and thinly sliced
  • 3 large garlic cloves, minced
  • 12 oz gluten-free penne pasta
  • 0.5 cup canned, diced fire-roasted tomatoes
  • 3.5 cups chicken broth
  • 2 tablespoons no-salt or low-salt Cajun seasoning mix
  • 7 oz cream cheese
  • 1 teaspoon salt to taste
  • 1 tablespoon fresh Italian parsley, finely chopped (optional)
  • 1 teaspoon red pepper flakes (optional)

Instructions
 

  • In a large skillet or braiser, heat over medium heat. Add the beef sausage medallions and sear them for about 4 minutes, turning until they are crispy on both sides. Once done, remove them and place on a paper towel-lined plate to drain. Keep the sausage oil in the skillet for flavor!
  • In the same skillet, add the sliced mushrooms, bell peppers, and minced garlic. Sauté for about 3 minutes, or until the mushrooms start to brown.
  • Add the gluten-free penne pasta, fire-roasted tomatoes, chicken broth, and Cajun seasoning to the skillet. Stir everything together until well combined. Cover the skillet with a lid and bring the broth to a boil.
  • Once boiling, reduce the heat to medium and let the pasta simmer for about 12-15 minutes. Stir occasionally until the pasta is tender and cooked al dente.
  • Add the cream cheese in chunks to the skillet. Stir until it melts completely and forms a thick, creamy sauce.
  • Return the cooked sausage to the skillet, add salt to taste, and give everything a good stir. If desired, sprinkle with fresh Italian parsley and red pepper flakes before serving. Enjoy this delightful dish warm!

Notes

For a little extra kick, feel free to adjust the amount of Cajun seasoning or add more red pepper flakes.
