Ingredients

  • 1.5 pounds ground beef
  • 0.25 cup chopped parsley
  • 1 whole egg, beaten
  • 0.33 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 0.33 cup milk
  • 2 teaspoons fresh oregano or 1/2 teaspoon dried
  • 1 medium onion, chopped
  • 1 small green bell pepper, chopped
  • 4 tablespoons roux
  • 3 cups beef broth
  • 6 medium red potatoes, diced
  • 2 cans sliced carrots, drained
  • 1 to taste Tabasco
  • 1 bunch chopped parsley for garnish
  • 1 to taste salt and pepper
  • 1 cup cooked white rice

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine ground beef, parsley, beaten egg, parmesan cheese, garlic, salt, pepper, milk, and oregano. Mix gently until just combined. Tip: Be careful not to overmix, as this can make the meatballs tough.
  • Form the mixture into meatballs of your desired size and place them on a baking sheet. Bake for 20-25 minutes until cooked through. Set aside.
  • In a large skillet, heat a bit of oil over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  • Add the roux to the skillet and stir until melted and combined with the veggies.
  • Pour in the beef broth and whisk until well combined, creating a thick gravy. Tip: Adjust the thickness by adding more broth if needed.
  • Add the cooked meatballs, Tabasco, bell pepper, drained carrots, and diced potatoes to the pot. Ensure the meatballs are submerged in the liquid.
  • Bring the stew to a low boil, then reduce the heat to a simmer with the lid slightly ajar. Stir occasionally.
  • Taste halfway through cooking and adjust seasoning if needed.
  • Simmer until the potatoes are tender and the stew reaches your desired thickness, adjusting the lid as needed.
  • While the stew simmers, prepare the white rice according to your preferred method.
  • Once the stew is cooked to your liking, remove from heat. Garnish with fresh parsley and serve over white rice.

Notes

For a spicier kick, add more Tabasco or your favorite hot sauce. Adjust the thickness of the stew by simmering with the lid off to evaporate excess liquid. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
