  • 14 oz beef sausage, sliced
  • 1 Tbsp cooking oil
  • 1 medium bell pepper, diced
  • 1 tsp smoked paprika
  • 0.5 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.25 tsp garlic powder
  • 0.25 tsp onion powder
  • 0.125 tsp cayenne pepper
  • 0.125 tsp black pepper, freshly cracked
  • 15 oz fire roasted diced tomatoes
  • 1 cup long grain white rice, uncooked
  • 1.5 cups chicken broth

Instructions
 

  • In a deep skillet or Dutch oven, heat the cooking oil over medium heat. Add the sliced beef sausage and sauté until well browned, about 5-7 minutes. Don’t worry if it browns a bit on the bottom; that adds flavor!
  • While the sausage is cooking, dice the bell pepper. Once the sausage is browned, add the bell pepper to the skillet and sauté for an additional minute.
  • Stir in the spices: smoked paprika, oregano, thyme, garlic powder, onion powder, cayenne, and black pepper. Sauté for another minute to toast the spices.
  • Add the fire roasted diced tomatoes (with juices), uncooked rice, and chicken broth to the skillet. Stir well to combine, scraping up any browned bits from the bottom.
  • Cover the skillet with a lid and increase the heat to medium-high until the broth comes to a full boil. Once boiling, reduce the heat to low and let it simmer for 20 minutes.
  • After 20 minutes, remove the skillet from the heat and let it rest, covered, for an additional 5 minutes.
  • Finally, remove the lid and gently fold the sausage and rice together to mix. Top with sliced green onions and serve hot!

Notes

For a milder dish, reduce the cayenne pepper or omit it entirely. Feel free to add other vegetables like peas or corn for extra nutrition and color. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
