  • 1 cup zucchini sliced into half-rounds
  • 1 cup yellow squash sliced into half-rounds
  • 1 cup red bell pepper cut into strips
  • 1 cup red onion cut into strips
  • 14 oz beef sausage sliced into rounds
  • 2 Tbsp cooking oil divided
  • 0.5 tsp smoked paprika
  • 0.25 tsp garlic powder
  • 0.25 tsp cayenne pepper
  • 0.25 tsp salt
  • 0.25 tsp freshly cracked black pepper
  • 2 Tbsp chopped fresh parsley

Instructions
 

  • Begin by slicing the zucchini and yellow squash into half-rounds. Cut the red bell pepper and red onion into strips. Place all the vegetables in a large bowl.
  • Slice the beef sausage into rounds. In a large skillet, heat 1 Tbsp of cooking oil over medium heat. Add the sausage and cook until browned, about 5-7 minutes. Once browned, remove the skillet from heat and transfer the sausage to a clean bowl.
  • Drizzle the remaining 1 Tbsp of cooking oil over the vegetables. Sprinkle the smoked paprika, garlic powder, cayenne pepper, salt, and black pepper on top. Toss the vegetables to ensure they are well coated with the oil and spices. This step is crucial for enhancing the flavors!
  • Return the skillet to the heat and increase to medium-high. Once hot, add the seasoned vegetables to the skillet. Sauté for about 3-5 minutes, just until they are slightly tender. Remember, they will continue to cook when reheating, so be careful not to overcook.
  • Remove the skillet from heat and add the cooked sausage and chopped parsley to the vegetables. Toss everything together to combine. Taste and adjust the seasoning if needed. Don’t be afraid to add a little extra spice if you like it hot!
  • Serve immediately or divide into four portions and refrigerate for later enjoyment. This dish is great for meal prep!

Notes

Feel free to add other vegetables like mushrooms or spinach for extra flavor and nutrition. This dish can be served over rice or pasta for a heartier meal.
