Instructions
Slice the turkey kielbasa into 1/4" rounds.
Spray the bottom of a Dutch oven or large pot with olive oil spray and heat over medium-high.
Cook the kielbasa slices for about 10 minutes until browned, stirring occasionally to ensure even cooking.
Dice the bell peppers and onion, then add them to the pot with the kielbasa. Cook for another 10 minutes until tender, stirring occasionally.
Use the moisture from the peppers and onions to deglaze the pot, scraping up any browned bits.
Add paprika, onion powder, oregano, cayenne, and salt. Stir well to combine.
Halve the cherry tomatoes and add them to the pot. Mix well to incorporate.
Add the uncooked rice, stir, then pour in the chicken broth. Stir again to ensure the rice is evenly distributed.
Bring the mixture to a boil, cover, and reduce to a simmer. Cook for 15-20 minutes until the rice is tender, checking occasionally to avoid burning.
Add the shrimp, stir, cover, and cook for another 5 minutes until the shrimp is opaque and firm.
Toss in the chopped scallions and mix well to combine flavors.
Taste and adjust seasoning with more salt or cayenne if needed. For a spicier kick, add more cayenne pepper or a dash of hot sauce.
