  • 13 oz turkey kielbasa sliced into 1/4" rounds
  • 2 pieces bell peppers diced
  • 1 pieces onion diced
  • 1 pint cherry tomatoes halved
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 0.5 tsp onion powder
  • 0.5 tsp kosher salt
  • 0.25 tsp cayenne pepper add more for extra spice!
  • 1.5 cups white rice uncooked
  • 3 cups reduced-sodium chicken broth
  • 1 lbs shrimp deveined
  • 3 pieces scallions chopped

Instructions
 

  • Slice the turkey kielbasa into 1/4" rounds.
  • Spray the bottom of a Dutch oven or large pot with olive oil spray and heat over medium-high.
  • Cook the kielbasa slices for about 10 minutes until browned, stirring occasionally to ensure even cooking.
  • Dice the bell peppers and onion, then add them to the pot with the kielbasa. Cook for another 10 minutes until tender, stirring occasionally.
  • Use the moisture from the peppers and onions to deglaze the pot, scraping up any browned bits.
  • Add paprika, onion powder, oregano, cayenne, and salt. Stir well to combine.
  • Halve the cherry tomatoes and add them to the pot. Mix well to incorporate.
  • Add the uncooked rice, stir, then pour in the chicken broth. Stir again to ensure the rice is evenly distributed.
  • Bring the mixture to a boil, cover, and reduce to a simmer. Cook for 15-20 minutes until the rice is tender, checking occasionally to avoid burning.
  • Add the shrimp, stir, cover, and cook for another 5 minutes until the shrimp is opaque and firm.
  • Toss in the chopped scallions and mix well to combine flavors.
  • Taste and adjust seasoning with more salt or cayenne if needed. For a spicier kick, add more cayenne pepper or a dash of hot sauce.
