Ingredients
  

Main Ingredients

  • 1 pound leftover cooked turkey or chicken, chopped or shredded
  • 14 ounces andouille sausage, cut into 1-inch rounds
  • 1 tablespoon Cajun seasoning add 1 teaspoon salt if your seasoning is salt-free
  • 3 cups low-sodium chicken broth
  • 15 ounces diced tomatoes
  • 0.5 cup onion, diced
  • 2 cloves garlic, minced
  • 1 whole bell pepper, chopped
  • 1 stalk celery, sliced
  • 1 tablespoon oil for Instant Pot

Instructions
 

  • If using a slow cooker, add all the ingredients to the pot. Stir well to combine.
  • Set the slow cooker to HIGH for 2-3 hours or LOW for 4-6 hours, allowing the flavors to meld beautifully.
  • If using an Instant Pot, turn it on and select the sauté function. Once hot, add the oil.
  • Add the diced onion, chopped bell pepper, and sliced celery to the pot. Cook for 3-5 minutes, stirring occasionally, until the vegetables begin to soften.
  • Pour in the chicken broth and use a wooden spoon to scrape any bits off the bottom of the pot, ensuring nothing sticks.
  • Add the chopped turkey, andouille sausage, diced tomatoes, and Cajun seasoning. Stir everything together until well mixed.
  • Select the manual setting and set the pressure to high for 20 minutes. Once the cooking time is complete, perform a quick release of the pressure.

Notes

For a spicier kick, feel free to add more Cajun seasoning or a dash of hot sauce. This stew pairs wonderfully with crusty bread or over rice for a heartier meal. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
