  • 2 boneless skinless chicken breasts
  • 3.5 oz. sun-dried tomatoes in oil
  • 4 slices fresh mozzarella
  • 6 fresh basil leaves
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 tablespoon minced garlic
  • 1/3 cup balsamic vinegar
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Carefully cut a pocket into each chicken breast.
  • Stuff each pocket with sun-dried tomatoes, mozzarella, and basil. Secure with toothpicks.
  • Sprinkle the top with oregano, basil, salt, and pepper.
  • Heat an ovenproof skillet over medium heat and brown the chicken for 3-5 minutes per side.
  • Mix minced garlic and balsamic vinegar in a bowl.
  • Pour the garlic-balsamic mixture over the chicken.
  • Transfer the skillet to the oven and bake for 10-15 minutes until cooked through.
  • Optional: Top with freshly chopped basil and drizzle with balsamic glaze before serving.

Notes

For added flavor, consider marinating the chicken in balsamic vinegar for a few hours before cooking. Serve with a side of steamed vegetables or a fresh salad for a complete meal.
