Ingredients

  • 1 large yellow onion, peeled and thinly sliced
  • 1 tbsp vegan butter or olive oil
  • cups water
  • 1 pinch salt
  • 0.5 lb dry spaghetti or linguine
  • 0.5 lb mushrooms of choice, thinly sliced
  • 0.5 tbsp vegan butter or olive oil
  • 1 tbsp white miso paste
  • 0.25 cup grated vegan parmesan or other cheese
  • 0.5 cup pasta water (or more as needed)
  • to taste salt
  • for garnish chopped parsley or basil
  • for garnish chili flakes

Instructions
 

  • Caramelize the onions: Heat vegan butter or olive oil in a Dutch oven, add onions, and cook for 30-40 minutes, stirring frequently.
  • Cook the pasta: Boil salted water, add pasta, and cook until al dente, reserving pasta water.
  • Sauté mushrooms: In the same pot, heat remaining vegan butter or oil, add mushrooms, and cook until browned.
  • Finish the pasta: Add onions, pasta, miso, salt, cheese, and reserved pasta water to the pot and mix until combined.
  • Garnish and serve: Serve hot with parsley or basil and chili flakes.

Notes

For added flavor, consider using a mix of different mushrooms. If you prefer a creamier sauce, add more pasta water gradually until you reach your desired consistency.
