Caramelized Slow Roast Asian Beef Short Ribs

  • 1.5 tablespoon oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 pieces beef short ribs
  • 1 large red onion, peeled and diced
  • 1.5 teaspoon smoked paprika
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon cayenne
  • 2 tablespoon dark brown sugar
  • 1 tablespoon honey
  • 1 tablespoon water
  • 3 cloves garlic, peeled and crushed
  • 14 ounce chopped tomatoes
  • 2.25 cups hot beef stock
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sauce/HP Sauce/A1 Steak sauce
  • 1 tablespoon light brown sugar
  • 1 teaspoon chili flakes
  • 1 bunch freshly chopped coriander (cilantro)
  • 1 serving boiled rice

Instructions
 

  • Preheat the oven to 140C/275F (fan).
  • Heat oil in a large casserole pan over high heat. Season the short ribs with salt and pepper, then brown them on all sides for about 6-8 minutes.
  • Set the short ribs aside. Reduce the heat to low, add the diced onion to the pan, season with salt and pepper, and cook for 5 minutes until softened.
  • In a small bowl, mix smoked paprika, cinnamon, cayenne, dark brown sugar, honey, and water. Spread half of this glaze over the short ribs.
  • Add crushed garlic to the onions and cook for an additional 30 seconds. Then, add chopped tomatoes, hot beef stock, Worcestershire sauce, and brown sauce. Bring this mixture to a boil.
  • Place the short ribs on top of the sauce mixture in the pan. Cover with a lid and bake in the oven for 3 hours.
  • After 3 hours, remove from the oven and stir. Spread the remaining glaze over the short ribs and sprinkle with light brown sugar. Increase the oven temperature to 200C/400F (fan) and cook uncovered for 20-30 minutes until the short ribs are dark and sticky.
  • Remove from the oven, sprinkle with chili flakes and fresh coriander, and serve with boiled rice.

Notes

For extra tenderness, you can marinate the short ribs in the glaze overnight before cooking.
