  • 4 whole sweet potatoes peeled and sliced into 1-inch rounds
  • 0.25 cup butter melted
  • 0.5 teaspoon salt
  • 2 tablespoons maple syrup
  • 12 whole marshmallows halved
  • 24 whole pecan halves

Instructions
 

  • Preheat the oven to 425°F (220°C) and grease a sheet pan with butter or nonstick spray.
  • Place the sweet potato rounds on the pan, drizzle the melted butter over them, and toss until evenly coated. Season with salt.
  • Roast the sweet potatoes for about 20 minutes, then flip them over (bottoms should be browned) and roast for another 15-20 minutes until fork-tender.
  • Remove from the oven and set the oven to broil.
  • Drizzle maple syrup over the roasted sweet potatoes and gently toss. Top with marshmallow halves.
  • Broil the marshmallow-topped sweet potatoes for 1-3 minutes until lightly toasted (watch so they don't burn).
  • As soon as the sweet potatoes come out of the oven, press a pecan half into the top of each marshmallow. Serve immediately.

Notes

For an extra crunch, you can toast the pecans before adding them to the marshmallows.
