Instructions
Preheat the oven to 425°F (220°C) and grease a sheet pan with butter or nonstick spray.
Place the sweet potato rounds on the pan, drizzle the melted butter over them, and toss until evenly coated. Season with salt.
Roast the sweet potatoes for about 20 minutes, then flip them over (bottoms should be browned) and roast for another 15-20 minutes until fork-tender.
Remove from the oven and set the oven to broil.
Drizzle maple syrup over the roasted sweet potatoes and gently toss. Top with marshmallow halves.
Broil the marshmallow-topped sweet potatoes for 1-3 minutes until lightly toasted (watch so they don't burn).
As soon as the sweet potatoes come out of the oven, press a pecan half into the top of each marshmallow. Serve immediately.
Notes
For an extra crunch, you can toast the pecans before adding them to the marshmallows.
