  • 1 cup 4% high protein cottage cheese
  • 1 bag (12oz) frozen cauliflower rice
  • 1 cup grated parmesan cheese divided

Instructions
 

  • Preheat your oven to 375°F (190°C) and prepare a baking tray by lining it with parchment paper for easy cleanup.
  • Place the cottage cheese in a fine-mesh strainer over a bowl. Let it drain for 5-10 minutes to remove excess liquid.
  • In a large nonstick skillet over medium heat, cook the frozen cauliflower rice until fully defrosted and most of the moisture has evaporated, about 7-10 minutes.
  • Transfer the cauliflower to a bowl and let it cool for 5-10 minutes.
  • Blend the drained cottage cheese in a mini blender until smooth and creamy.
  • In a large mixing bowl, combine the blended cottage cheese, 2 tablespoons of grated Parmesan, and the cooled cauliflower. Mix well.
  • Using a 1 tbsp cookie scoop, form the mixture into tater tot shapes and place them on the prepared baking sheet.
  • Bake for 20 minutes, then remove from the oven. Sprinkle a little of the remaining Parmesan on top of each tot.
  • Return the tots to the oven and bake for another 15-20 minutes until the tops are golden brown and crispy.
  • Let the tater tots cool slightly before serving. Enjoy with your favorite dipping sauce.
