  • 12 mini peppers mini peppers
  • 1 lb ground beef
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • 1 tsp ground cumin
  • 1 small onion, grated (with juice)
  • 1 large egg white
  • 0.5 cup shredded mozzarella

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly spray a baking sheet with olive oil spray to prevent sticking.
  • In a mixing bowl, combine the ground beef, salt, black pepper, paprika, Italian seasoning, garlic powder, ground cumin, grated onion (with juice), and egg white. Mix everything together until well combined.
  • Carefully cut each mini pepper in half lengthwise and remove the seeds.
  • Fill each pepper half with the ground beef mixture, making sure to leave the top flat.
  • Place the stuffed peppers on the prepared baking sheet and bake in the preheated oven for 20 minutes, or until the peppers are softened and the beef is cooked through.
  • Remove the baking sheet from the oven and sprinkle the shredded mozzarella on top of each stuffed pepper. Return to the oven and bake for an additional 3-4 minutes, or until the cheese is melted and bubbly.
  • If desired, garnish with chopped parsley before serving.

Notes

For added flavor, consider mixing in some chopped fresh herbs or a dash of hot sauce to the beef mixture. These stuffed peppers can be served as a main dish or as a delightful appetizer!
