Ingredients
  

  • 12 ounces cream cheese cubed
  • 3/4 cup powdered sugar
  • 1 cup butter room temperature
  • 1 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 2 1/2 cups all-purpose flour
  • 2 cups semi-sweet chocolate chips

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set it aside.
  • In a stand mixer fitted with the paddle attachment, combine the cream cheese and powdered sugar. Mix on medium speed for 1-2 minutes until smooth, scraping the sides of the bowl as needed. Transfer the cream cheese mixture to a smaller bowl and refrigerate while you prepare the cookie dough.
  • In the same mixing bowl, beat together the softened butter, brown sugar, and granulated sugar on medium speed for 2 minutes until creamy. This step is crucial for achieving the right texture!
  • Add the egg, egg yolk, vanilla extract, baking soda, and salt to the mixture. Mix for 1 minute until well combined, scraping the sides of the bowl as necessary.
  • Reduce the mixer speed to low and gradually add the flour, mixing until just combined. Stir in the chocolate chips until evenly distributed.
  • Using a medium (2-tablespoon) cookie scoop, portion out the dough. Flatten each dough ball into a circle. Scoop 2 teaspoons of the cold cream cheese mixture and place it in the center of the flattened dough. Carefully wrap the dough around the cream cheese, sealing it inside. This will create a delightful surprise in every bite!
  • Place the cookie dough balls on the prepared baking sheet, spacing them 2 inches apart. Bake for 9 minutes, or until the edges are golden brown and the tops are just set.
  • Remove the cookies from the oven and let them cool on the baking sheet for 3 minutes before transferring them to a wire rack to cool completely. This cooling time helps them firm up just right!

Notes

For a fun twist, try adding nuts or different types of chocolate chips to the cookie dough. Make sure the cream cheese is well chilled to help it hold its shape inside the cookies.
