Cheesy Baked Tortellini Casserole

  • 1.5 lbs tortellini fresh or frozen, any flavor
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese freshly grated

Instructions
 

  • Preheat your oven to 350°F (175°C) and bring a medium saucepan of water to a boil over high heat.
  • Add a pinch of salt to the boiling water, then add the tortellini. Cook until the tortellini floats to the top, about 6-8 minutes (longer if cooking from frozen).
  • Drain the cooked tortellini and let it sit in a strainer for 1-2 minutes to ensure all water is drained.
  • In an 8x8 or 11x7 baking pan, combine the tortellini with the marinara sauce.
  • Sprinkle the freshly grated mozzarella cheese over the top of the tortellini.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbling on top.
  • Switch the oven to broil and broil for an additional 5-6 minutes, or until the cheese is browned.
  • Serve the tortellini bake immediately, accompanied by a side salad.

Notes

Leftover tortellini bake can be stored in an airtight container in the fridge for 3-4 days.
