Ingredients

  • 1 can 16 ounces refried beans
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 2/3 cup cheddar cheese
  • 6 flour tortillas
  • 1 can 10-16 ounces red enchilada sauce
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 cup sour cream
  • 1 1/2 cups cheddar cheese shredded

Instructions
 

  • In a medium bowl, mix the refried beans, cumin, chili powder, and 2/3 cup of cheddar cheese until well combined.
  • Spoon a dollop of the bean mixture onto each tortilla and roll them up.
  • In another bowl, whisk together the red enchilada sauce, cumin, chili powder, and sour cream until smooth.
  • Preheat the oven to 350°F (175°C).
  • Spread 1/3 cup of the enchilada sauce on the bottom of a 9x13-inch baking dish.
  • Place the rolled tortillas seam side down in the baking dish.
  • Pour the remaining sauce over the enchiladas and sprinkle with 1 1/2 cups of cheddar cheese.
  • Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
  • Serve and enjoy your delicious cheesy bean enchiladas!

Notes

For a spicier kick, add some chopped jalapeños to the bean mixture before rolling the enchiladas.
