  • 1 pound ground beef
  • 2 cups cauliflower, chopped (about ½ head cauliflower)
  • 2 teaspoons steak seasoning
  • 0.25 cup shredded cheddar cheese
  • 1 tablespoon butter, melted
  • 4 ounces cream cheese, cubed
  • 2 eggs beaten
  • 0.5 cup heavy cream
  • 0.5 cup shredded cheddar cheese

Instructions
 

  • Preheat your oven to 400°F (200°C). Grease a casserole dish, approximately 8x10 inches, to prevent sticking.
  • Chop the cauliflower into bite-sized pieces. Place the raw cauliflower in a microwave-safe bowl with a little water and microwave for 5 minutes. Drain the water; this helps soften the cauliflower before baking.
  • In a large nonstick skillet over medium-high heat, brown the ground beef. Sprinkle the steak seasoning over the meat as it cooks, breaking it up with a wooden spoon.
  • Once the beef is partially browned, reduce the heat to medium. Add in the cauliflower, cream cheese, and ¼ cup of cheddar cheese. Stir well to combine and transfer to the prepared baking dish.
  • In a separate bowl, beat the eggs. Whisk in the heavy cream and melted butter (make sure the butter has cooled slightly to avoid cooking the eggs).
  • Pour the egg mixture over the beef and cauliflower in the baking dish. Sprinkle the remaining ½ cup of shredded cheddar cheese on top for that golden, bubbly finish.
  • Bake for 30 minutes, or until the casserole is golden brown and bubbly. For extra browning, place it under the broiler for a couple of minutes, keeping a close eye to prevent burning.

Notes

For added flavor, consider mixing in some cooked and crumbled bacon before baking.
