  • 1 pound ground beef
  • 0.5 cup red bell pepper, diced
  • 0.5 cup green bell pepper, diced
  • 0.5 cup onion, diced
  • 2 large potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 0.5 cup beef stock
  • 2 cups shredded Colby Jack cheese

Instructions
 

  • In a large skillet over medium heat, add the ground beef, red bell pepper, green bell pepper, and onion. Cook for about 8-10 minutes, stirring occasionally, until the beef is browned and the vegetables start to soften. Tip: Use a spatula to break up the beef as it cooks, ensuring even browning.
  • Add the diced potatoes to the skillet. Drizzle with olive oil and sprinkle with garlic powder, paprika, Italian seasoning, salt, and pepper. Stir well to combine all the ingredients.
  • Pour in the beef stock, stir, then cover the skillet with a lid. Let it cook for 15-20 minutes, stirring occasionally, until the potatoes are tender and most of the liquid is absorbed. Tip: Keep an eye on the potatoes to prevent them from sticking to the bottom of the skillet.
  • Sprinkle the shredded Colby Jack cheese over the hash. Cover the skillet again and let it sit for a few minutes until the cheese is melted and bubbly. Tip: For an extra cheesy finish, you can place the skillet under the broiler for a couple of minutes, just watch closely to prevent burning!

Notes

You can customize this hash by adding other vegetables like mushrooms or zucchini. Serve with a side of sour cream or salsa for extra flavor.
