  • 1 tablespoon butter
  • 1 large yellow onion, diced
  • 2 large carrots, peeled and diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 0.25 cup all-purpose flour or gluten-free flour
  • 0.5 teaspoon smoked paprika
  • 3 cups vegetable broth not-chicken style
  • 4 cups broccoli, chopped
  • 2 cups 1% milk
  • 4 oz cheddar cheese, shredded about 1 cup
  • 1 cup low-fat cottage cheese blended
  • Salt & pepper to taste

Instructions
 

  • In a large pot over medium heat, melt the butter.
  • Add the diced onion, carrot, and celery. Cook for 10 minutes, stirring frequently until they soften.
  • Add the minced garlic and cook for an additional minute. Garlic can burn quickly, so keep an eye on it!
  • Sprinkle in the smoked paprika and flour, stirring for another minute until the vegetables are coated.
  • Pour in the vegetable broth and add the chopped broccoli. Bring to a simmer and cook for 8-9 minutes until the broccoli softens.
  • Lower the heat and add the milk. Warm the soup gently to avoid curdling.
  • Stir in the blended cottage cheese and shredded cheddar until melted. Make sure to stir continuously for a smooth texture.
  • Take one cup of soup and blend it in a blender, allowing steam to escape. Return the blended soup to the pot. Alternatively, use an immersion blender to blend the soup gently.
  • Season with salt and pepper to taste. Start with a little salt and add more as needed to enhance the flavors.

Notes

For added flavor, consider topping the soup with extra shredded cheddar or a sprinkle of smoked paprika.
