  • 2 cup shredded rotisserie chicken
  • 12 oz frozen cauliflower rice No need to pre-cook
  • 4 strips bacon, cooked and chopped
  • 1 teaspoon herb and garlic seasoning or Italian seasoning
  • 0.5 teaspoon salt
  • 0.5 cup cream cheese, room temperature
  • 0.25 cup heavy cream
  • 1.5 cups shredded cheese divided

Instructions
 

  • Preheat your oven to 350°F (180°C). This ensures that your casserole cooks evenly.
  • Grease or spray a casserole dish with nonstick spray to prevent sticking. This is an important step to ensure easy serving!
  • In a large bowl, combine the shredded chicken, cauliflower rice, chopped bacon, herb and garlic seasoning, salt, cream cheese, and heavy cream. Mix well until all ingredients are evenly combined.
  • Transfer the mixture into the prepared casserole dish, spreading it out evenly for consistent cooking.
  • Sprinkle the remaining 1/2 cup of shredded cheese on top of the casserole, adding that irresistible cheesy layer.
  • Bake in the preheated oven for 20 minutes, or until the casserole is hot and bubbly. Keep an eye on it to achieve that perfect golden finish.

Notes

For added flavor, consider mixing in some chopped green onions or bell peppers. You can use any type of shredded cheese you prefer, such as cheddar, mozzarella, or a blend.
