  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 0.5 cup diced yellow onion
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 0.75 teaspoon kosher salt or to taste
  • 0.25 teaspoon granulated garlic
  • 0.25 teaspoon fresh ground black pepper
  • 1 medium sweet potato, peeled, par-cooked, and diced
  • 1 cup cherry tomatoes, halved
  • 15 ounces canned black beans, drained and rinsed
  • 4 ounces canned diced green chiles
  • 0.5 cup salsa or red enchilada sauce
  • 0.5 cup shredded cheddar or Colby Jack cheese
  • 0.5 of a lime juiced
  • 1 tablespoon chopped cilantro (optional)

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat. This will help to get a nice sear on the chicken.
  • In a small bowl, mix all the spices together (cumin, chili powder, oregano, salt, garlic, and pepper). This blend will enhance the flavor of the chicken.
  • Add the chicken to the hot skillet, spreading it evenly. Sprinkle half of the spice blend over the chicken. Cook for about 3 minutes or until the chicken is lightly browned.
  • Next, add the diced onion to the skillet. Cook for a few more minutes until the onion softens and the chicken is cooked through, about 5-7 minutes total.
  • Reduce the heat to medium, and add the remaining spice blend, diced sweet potato, cherry tomatoes, black beans, green chiles, and salsa or enchilada sauce. Stir well to combine all the ingredients.
  • Continue to cook everything together until heated through, around 2-3 minutes. You want the sweet potatoes to be tender but not mushy.
  • Squeeze lime juice over the mixture, then sprinkle with shredded cheese. This adds a fresh flavor and melty goodness!
  • Cover the skillet with a lid or foil until the cheese melts, approximately 2-3 minutes.
  • Garnish with cilantro if desired, and serve hot. Enjoy your meal!

Notes

To par-cook the sweet potato, microwave it for a few minutes until slightly tender before dicing.
