  • 1 pound Pulled Rotisserie Chicken
  • 14 oz Frozen Onions and Peppers
  • 15 oz Black Beans drained and rinsed
  • 1 cup Frozen Fire Roasted Corn 140g
  • 8 count Flour Protein Tortillas
  • 2 cups Low Fat Cottage Cheese
  • 4 oz Diced Green Chiles
  • 1 packet Taco Seasoning
  • 2 oz Colby Jack Cheese
  • 1 to 2 Tablespoons Water as needed

Instructions
 

  • In a food processor or blender, combine all the cheese sauce ingredients except the water. Blend until smooth, adding water as needed to reach the desired consistency. Set aside.
  • Heat a large pan over medium heat and add the frozen peppers and onions. Cook for 4-5 minutes until thawed.
  • Add the pulled chicken, black beans, and corn to the pan. Cook for an additional 2-3 minutes until everything is heated through.
  • Remove the pan from heat and stir in the cheese sauce until well combined.
  • Place 8 oz of the cheesy chicken mixture onto each tortilla and roll tightly.
  • Heat a griddle or nonstick skillet over medium heat. Grill the burritos for 30-60 seconds per side until golden brown all around.

Notes

For added flavor, consider topping the burritos with salsa, avocado, or a dollop of sour cream.
