  • 1.5 pounds ground chicken
  • 0.75 cup Italian breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 0.33 cup minced yellow onion
  • 4 cloves minced garlic
  • 1 large egg
  • 0.25 cup whole milk
  • 3 tablespoons chopped parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup shredded Parmesan cheese

Instructions
 

  • Preheat your oven to 350°F (175°C) and spray a 9x5x2-inch loaf pan with nonstick cooking spray.
  • In a large mixing bowl, combine the ground chicken, Italian breadcrumbs, grated Parmesan cheese, minced onion, minced garlic, egg, whole milk, 2 tablespoons of chopped parsley, salt, and black pepper.
  • Use clean hands or a large spoon to mix the ingredients until they are well combined.
  • Shape the meat mixture into a loaf and place it in the prepared loaf pan. Sprinkle the top with the shredded Parmesan cheese and the remaining 1 tablespoon of chopped parsley.
  • Bake in the preheated oven for 1 hour. For a golden brown top, broil for the last 2 minutes, but keep a close eye on it to prevent burning!
