  • 10 ounces red enchilada sauce divided
  • 1 pound ground beef
  • 0.75 cup oats coarsely ground
  • 2 units eggs
  • 1 teaspoon salt
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon pepper
  • 1 teaspoon oregano
  • 0.5 teaspoon cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon hot sauce optional
  • 2 cups grated cheese (cheddar, Monterey Jack, Colby Jack, or pepper jack)
  • units cilantro for garnish (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9 x 13-inch baking dish.
  • In a mixing bowl, combine 1/4 cup of enchilada sauce, ground beef, ground oats, eggs, salt, onion powder, garlic powder, pepper, oregano, cumin, chili powder, and hot sauce (if using).
  • Shape the mixture into meatballs and place in the prepared baking dish.
  • Pour the remaining enchilada sauce over the meatballs, cover with foil, and bake for 30 minutes.
  • Uncover, sprinkle with cheese, and bake for an additional 10 minutes until cheese is melted.
  • Serve hot, garnished with cilantro if desired.

Notes

You can customize the level of spiciness by adjusting the amount of hot sauce or using a spicier enchilada sauce. These meatballs are great served over rice or with a side of tortillas for a complete meal.
