Cheesy Perogies with Sausage and Onions

  • 1 lb frozen potato and cheese perogies
  • 1 tablespoon oil
  • 1 medium onion, finely diced
  • 4 pieces fully cooked smoked sausages, sliced
  • 1 tablespoon freshly minced garlic
  • 0.5 cup heavy whipping cream adjust to your preferred sauciness
  • 1 to taste salt and pepper

Instructions
 

  • Bring a large pot of water to a boil and add a generous amount of salt. Once boiling, add the frozen perogies and cook for about 5 minutes, or until they float to the top.
  • While the perogies are cooking, heat a large skillet over medium-high heat and add the oil.
  • Add the sliced sausages to the skillet and cook for about 5 minutes, or until they are lightly browned on each side.
  • Stir in the diced onion and cook for 2-3 minutes, until softened. Be careful not to let them burn!
  • Add the minced garlic to the skillet and cook for an additional minute, stirring frequently.
  • Once the perogies are done, drain them and add them to the skillet with the sausage and onions. If your skillet is small, you can remove the sausage and onions temporarily to make more room. Cook the perogies for about 2-3 minutes, until they are slightly crispy on each side.
  • Pour in the heavy whipping cream (and add the sausage and onions back if you removed them). Simmer on medium heat for about 2-3 minutes, or until the cream thickens into a sauce. If you prefer a creamier dish, feel free to add more cream.
  • Remove from heat, taste, and adjust the seasoning with salt and pepper as desired. Serve warm and enjoy!

Notes

For a bit of extra flavor, consider adding some fresh herbs like parsley or chives before serving. You can also add vegetables like spinach or bell peppers for added nutrition.
