Ingredients
  

Main Ingredients

  • 2 cloves garlic
  • 1 jalapeño jalapeño optional
  • 1 Tbsp cooking oil
  • 2 15 oz. cans pinto beans
  • 0.25 tsp smoked paprika
  • 0.25 tsp ground cumin
  • 0.125 tsp freshly cracked black pepper
  • 2 dashes hot sauce
  • 0.5 cup shredded cheddar cheese

Instructions
 

  • Mince the garlic and finely dice the jalapeño, removing the stem and seeds.
  • In a pot, sauté the garlic and jalapeño with cooking oil over medium heat for about a minute until the garlic is fragrant.
  • Blend one can of pinto beans (with the liquid) until smooth.
  • Add the puréed beans and the second can of drained beans to the pot with garlic and jalapeño. Stir well.
  • Season the beans with smoked paprika, cumin, pepper, and hot sauce. Heat over medium, stirring occasionally.
  • Add the shredded cheddar cheese and stir until melted into the beans. Adjust seasoning to taste.
  • Serve over rice or with your favorite dish.

Notes

For extra flavor, top with a dollop of sour cream or fresh cilantro.
