Instructions
Mince the garlic and finely dice the jalapeño, removing the stem and seeds.
In a pot, sauté the garlic and jalapeño with cooking oil over medium heat for about a minute until the garlic is fragrant.
Blend one can of pinto beans (with the liquid) until smooth.
Add the puréed beans and the second can of drained beans to the pot with garlic and jalapeño. Stir well.
Season the beans with smoked paprika, cumin, pepper, and hot sauce. Heat over medium, stirring occasionally.
Add the shredded cheddar cheese and stir until melted into the beans. Adjust seasoning to taste.
Serve over rice or with your favorite dish.
Notes
For extra flavor, top with a dollop of sour cream or fresh cilantro.
