  • 32 oz frozen diced potatoes or mini potatoes, cubed
  • 1 small onion, diced and sautéed (optional) Sauté until translucent for more flavor.
  • 2.5 cups shredded cheese
  • 0.33 cup butter, melted
  • 1 cup half and half or 2% milk
  • 10.5 oz cream of chicken soup
  • No alcoholic drinks allowed, please substitute with a non-alcoholic option.

Instructions
 

  • If desired, sauté the diced onion in a pan until translucent. This step enhances the flavor of your soup, making it even more delicious.
  • In a greased crockpot, combine the diced potatoes, kielbasa, sautéed onion, and shredded cheese. Make sure to mix them well so every bite is cheesy and flavorful.
  • Pour the melted butter and cream of chicken soup over the kielbasa mixture. The melted butter adds richness, while the soup brings creaminess.
  • Stir everything together until well combined. This ensures that all the ingredients are evenly distributed.
  • Cook on low for 3-4 hours. The longer you cook it, the more the flavors meld together, so if you have time, let it cook for the full 4 hours.
  • After cooking, add 1 cup of half and half and stir well. This will give your soup a creamy texture. Cook for an additional 15 minutes until the mixture thickens.
  • Serve the soup warm, topped with extra shredded cheese for that ultimate cheesy goodness.
