  • 4 oz cream cheese
  • 2 cups shredded mozzarella cheese
  • 2 tsp baking powder
  • 3 large eggs
  • 1 oz ranch dressing mix
  • 1.5 cups superfine almond flour
  • 1 cup shredded cheddar cheese
  • 0.5 cup chopped cooked bacon

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a microwave-safe bowl, combine the cream cheese and mozzarella cheese. Microwave on HIGH for 1 minute. Stir until the mixture is smooth. Tip: Ensure the cheese is fully melted for a creamy texture.
  • Add the baking powder, eggs, ranch dressing mix, and almond flour to the cheese mixture. Stir well to combine. Tip: Mixing thoroughly ensures that every biscuit has flavor.
  • Gently fold in the shredded cheddar cheese and chopped bacon until everything is evenly mixed. Tip: Be careful not to overmix, as this can make the biscuits tough.
  • Spray a 10-inch iron skillet with cooking spray. Divide the dough into 11 or 12 equal balls and place them in the skillet. Tip: Use a cookie scoop for uniform sizes!
  • Place the skillet in the refrigerator for 10 minutes to firm up the dough.
  • After chilling, remove the skillet from the refrigerator and bake in the preheated oven for 20 to 25 minutes, or until the biscuits are golden brown. Tip: Keep an eye on them as oven temperatures can vary!
  • For an extra touch, brush the cooked biscuits with melted butter and sprinkle with dried parsley, if desired.
