  • 1 tablespoon olive oil
  • 12 oz cooked beef sausage, sliced
  • 0.5 medium yellow onion, diced
  • 1 medium red bell pepper, diced
  • 2 small carrots, sliced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup white long grain rice, uncooked
  • 1 cup raw broccoli florets
  • 1 teaspoon salt
  • 0.5 cup milk
  • 1 cup mild cheddar cheese, shredded
  • 0.25 teaspoon red pepper flakes (optional)

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • (Optional) Add the cooked beef sausage to the skillet and sauté for about 6 minutes, or until they start to brown. Transfer the sausage to a plate, leaving the oil in the skillet.
  • Add the diced onion, bell pepper, sliced carrots, and minced garlic to the skillet. Cook for about 5 minutes, or until the onions and bell peppers begin to soften.
  • Stir in the chicken broth, uncooked rice, broccoli florets, salt, and the browned sausage. Increase the heat to high and bring the mixture to a boil.
  • Once boiling, reduce the heat to low and cover the skillet. Cook for 15-17 minutes, stirring occasionally to prevent the rice from sticking to the bottom.
  • When the rice is fully cooked, mix in the milk, shredded cheddar cheese, and red pepper flakes (if using). Stir until everything is well combined and the cheese is melted. Serve immediately.

Notes

For added flavor, consider using low-sodium chicken broth. You can substitute the broccoli with other vegetables like peas or spinach for variety.
