  • 1 pound ground beef
  • 1 cup chicken or beef broth
  • 1 cup milk
  • 1 can tomato sauce (8 ounces)
  • 1 package taco seasoning (1 ounce)
  • 1.5 cups elbow noodles (gluten-free if preferred)
  • 1.5 cups shredded cheddar cheese
  • 1 can Ro-Tel (10 ounce, undrained)

Instructions
 

  • In a large skillet, brown the ground beef over medium heat. Make sure to drain off any excess grease for a healthier dish.
  • Add the undrained can of Ro-Tel, broth, milk, tomato sauce, and taco seasoning to the skillet. Stir well to combine all the flavors.
  • Increase the heat to medium-high and bring the mixture to a gentle simmer, allowing the flavors to meld.
  • Stir in the elbow noodles, then reduce the heat to low. Cover the skillet and let it cook for 15-20 minutes, or until the noodles are tender. Stir occasionally to prevent sticking.
  • Once the noodles are cooked, stir in the shredded cheddar cheese until it melts and creates a creamy, cheesy goodness.

Notes

For a little extra kick, consider adding some diced jalapeños or a sprinkle of chili powder. This dish pairs wonderfully with a side salad or some warm bread.
