  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 small jalapeño, seeded and diced
  • 1 pound ground turkey
  • 3 tablespoons enchilada seasoning
  • 1 can black beans, drained and rinsed (15 oz.)
  • 1 can diced tomatoes (14.5 oz.)
  • 1 can red enchilada sauce (28 oz.)
  • 1 2 cups shredded cheddar cheese
  • 8 10 (8-inch) flour tortillas

Instructions
 

  • Preheat the oven to 400°F (200°C). In a large sauté pan or skillet, heat olive oil over medium heat.
  • Add the diced onion, garlic, jalapeño, salt, and pepper. Cook for about 5 minutes, stirring occasionally.
  • Add the ground turkey and cook until no longer pink.
  • Stir in the enchilada seasoning, black beans, and diced tomatoes. Mix well.
  • Pour about 1 cup of the red enchilada sauce into a baking dish.
  • Spoon the filling onto the tortillas and roll them up.
  • Pour more enchilada sauce over the rolled enchiladas.
  • Sprinkle shredded cheddar cheese generously on top.
  • Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  • Allow to cool slightly before serving.

Notes

Feel free to customize these enchiladas with your favorite toppings like sour cream, guacamole, or fresh cilantro.
