1lbground turkey (85% lean)
1mediumyellow onion, diced
1mediumbell pepper, diced
0.5cancorn (or about 1 cup fresh corn)
1canblack beans, drained
0.5cupquinoa
0.75cupwater
2cupshredded cheese (Colby Jack and Monterey Jack blend)
2tablespoontaco seasoning(homemade or store-bought)
1teaspoonolive oil
1handfulcilantro (for garnish)
Instructions
Start by dicing the onion and bell pepper into small pieces. If you're making homemade taco seasoning, mix it together now. Shred your cheese and set it aside.
In a large cast iron skillet, heat the olive oil over medium heat. Cast iron skillets are great for even cooking.
Add the diced onion and bell pepper to the skillet, along with a pinch of salt. Cook for 3-4 minutes until softened, stirring occasionally.
Add the ground turkey and cook until browned and fully cooked, about 7-10 minutes. Stir in taco seasoning and mix well.
Once the turkey is cooked, add black beans, corn, quinoa, and water. Cover and simmer for 20 minutes, checking occasionally.
After 20 minutes, taste and adjust seasoning if needed. Stir to combine.
Add 1 cup of shredded cheese and mix in. Sprinkle remaining cheese on top, cover, and let it melt for 2-3 minutes.
Garnish with cilantro and serve warm. Enjoy with chips, tortillas, or on its own!
