  • 1 lb ground turkey (85% lean)
  • 1 medium yellow onion, diced
  • 1 medium bell pepper, diced
  • 0.5 can corn (or about 1 cup fresh corn)
  • 1 can black beans, drained
  • 0.5 cup quinoa
  • 0.75 cup water
  • 2 cup shredded cheese (Colby Jack and Monterey Jack blend)
  • 2 tablespoon taco seasoning (homemade or store-bought)
  • 1 teaspoon olive oil
  • 1 handful cilantro (for garnish)

Instructions
 

  • Start by dicing the onion and bell pepper into small pieces. If you're making homemade taco seasoning, mix it together now. Shred your cheese and set it aside.
  • In a large cast iron skillet, heat the olive oil over medium heat. Cast iron skillets are great for even cooking.
  • Add the diced onion and bell pepper to the skillet, along with a pinch of salt. Cook for 3-4 minutes until softened, stirring occasionally.
  • Add the ground turkey and cook until browned and fully cooked, about 7-10 minutes. Stir in taco seasoning and mix well.
  • Once the turkey is cooked, add black beans, corn, quinoa, and water. Cover and simmer for 20 minutes, checking occasionally.
  • After 20 minutes, taste and adjust seasoning if needed. Stir to combine.
  • Add 1 cup of shredded cheese and mix in. Sprinkle remaining cheese on top, cover, and let it melt for 2-3 minutes.
  • Garnish with cilantro and serve warm. Enjoy with chips, tortillas, or on its own!
