  • 1.5 cups all-purpose flour
  • 1 cup graham cracker crumbs
  • 0.67 cup packed brown sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup butter, melted
  • 4 cups unsweetened finely shredded coconut
  • 2 cans (14 ounces each) sweetened condensed milk
  • 2 jars (10 ounces each) maraschino cherries, drained and chopped
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract

Instructions
 

  • Preheat your oven to 325°F (160°C). Grease a 9x13-inch baking pan and set it aside.
  • In a small bowl, mix together the all-purpose flour, graham cracker crumbs, brown sugar, baking powder, and salt. Stir in the melted butter until well combined.
  • Press the crumb mixture firmly into the bottom of the prepared baking pan to form a crust.
  • In a separate bowl, combine the shredded coconut, sweetened condensed milk, chopped maraschino cherries, vanilla extract, and almond extract. Mix until everything is well combined.
  • Pour the coconut filling over the crust in the baking pan, spreading it evenly.
  • Bake in the preheated oven for 35-40 minutes, or until the edges are lightly browned.
  • Once baked, remove the pan from the oven and allow it to cool on a wire rack for one hour.
  • After cooling, cover the pan and refrigerate for at least four hours before cutting into bars.

Notes

For a fun twist, try adding chopped nuts or chocolate chips to the filling. These bars can be stored in the refrigerator for up to a week, making them a great make-ahead treat!
