  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon cinnamon
  • 14 tablespoons unsalted butter, softened
  • 0.75 cup packed brown sugar
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups quick-cook oats (old-fashioned oats work too)
  • 1 cup milk chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and lightly spray a 9 x 13 inch baking pan with cooking spray.
  • In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon until well combined.
  • In a large bowl, beat the softened butter and both sugars together until the mixture is light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • Gradually add the dry ingredients to the butter mixture. Start mixing on low speed until just combined, then increase the speed to fully incorporate.
  • Gently fold in the oats and chocolate chips until evenly distributed.
  • Press the batter evenly into the prepared baking dish.
  • Bake in the preheated oven for 25 minutes, or until the edges are golden brown.
  • Allow the bars to cool in the pan before cutting them into squares. Enjoy your delicious treats! Store any leftovers in an airtight container for up to two weeks.

Notes

For a nutty twist, consider adding 1/2 cup of chopped nuts to the batter. You can substitute the chocolate chips with dried fruit for a healthier option.
