Ingredients
  

Main Ingredients

  • 1.5 pounds chicken breast 2 to 3 large chicken breasts
  • 1 tablespoon homemade Italian seasoning or quality store-bought
  • 1 teaspoon sweet paprika
  • 0.5 cup all-purpose flour or more as needed
  • 1 pound fresh asparagus hard ends trimmed, cut on the diagonal into 2-inch pieces
  • 4 cloves garlic minced
  • 1 lemon lemon juiced
  • 0.5 cup homemade chicken broth or low sodium store-bought

Instructions
 

  • Prepare the chicken by slicing each breast horizontally to create thinner cutlets.
  • Season both sides of the chicken cutlets with Italian seasoning, sweet paprika, and salt and pepper.
  • Dredge the cutlets in flour, shaking off excess.
  • Sauté asparagus in olive oil until just tender, then set aside.
  • Pan-sear the chicken cutlets until golden brown.
  • Add garlic, sauté for 30 seconds, then add lemon juice and chicken broth.
  • Simmer until chicken is cooked through, adding asparagus back for the last few minutes.
  • Serve immediately.

Notes

For a twist, try adding cherry tomatoes or bell peppers along with the asparagus. Serve with a side of rice or crusty bread to soak up the flavorful sauce.
