  • 3 boneless skinless chicken breasts, trimmed and cut into chunks
  • 2-3 medium zucchini thickly sliced and quartered
  • 2-3 medium yellow squash thickly sliced and quartered
  • 12 oz white button mushrooms washed and quartered
  • Salt and pepper to taste
  • 3 tbsp minced garlic
  • 1/3 cup olive oil
  • 1/4-1/3 cup soy sauce
  • 1 1/2 tbsp rice wine vinegar
  • 1 tbsp sesame oil
  • 1 tsp garlic powder
  • 2 tbsp olive oil for drizzling

Instructions
 

  • In a large mixing bowl, combine the chicken chunks, zucchini, yellow squash, mushrooms, salt, pepper, minced garlic, 1 tablespoon of olive oil, soy sauce, rice wine vinegar, sesame oil, and garlic powder. Stir until everything is evenly mixed.
  • Transfer the chicken and vegetable mixture to the basket of your air fryer, spreading it out into an even layer. This helps achieve that lovely crispy texture.
  • Drizzle the remaining 2 tablespoons of olive oil evenly over the mixture to enhance the flavors and promote even cooking.
  • Preheat your air fryer to 375°F (190°C) for about 5 minutes. This step is crucial for ensuring that your food cooks evenly.
  • Cook the mixture in the air fryer for 15 minutes, shaking the basket halfway through to allow for even cooking. Keep an eye on it; every air fryer is a bit different!
  • Once done, serve your delicious chicken and vegetables alongside steamed white rice and yum yum sauce for a delightful meal.

Notes

Feel free to add other vegetables like bell peppers or carrots for extra color and flavor. For a spicier kick, consider adding a pinch of red pepper flakes to the mix.
