  • 1 lb skinless, boneless chicken breast, cut into 1-inch pieces
  • 2 unit zucchinis, sliced
  • 2 unit red bell peppers, chopped into chunks
  • 1 unit broccoli crown, broken into florets
  • 0.5 unit onion, sliced
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 0.25 cup low-sodium chicken broth
  • 1 tablespoon fresh chopped parsley, for garnish
  • 0.5 teaspoon red chili pepper flakes, optional

Instructions
 

  • In a large bowl, combine the chicken breast cubes with salt, pepper, 1 tablespoon of olive oil, and Cajun seasoning. Toss until the chicken is coated.
  • Heat a large skillet over medium heat with 1 tablespoon of olive oil. Add the seasoned chicken bites and cook for 5-7 minutes until the chicken is fully cooked. Transfer the chicken to a plate and set aside.
  • In the same skillet, stir-fry the onion for 2 minutes. Add more olive oil if needed. Then, add the broccoli, zucchini, and bell pepper. Season with Cajun seasoning and cook on medium heat until the vegetables are crisp-tender.
  • Deglaze the skillet with chicken stock. Add the cooked chicken back to the skillet and mix everything together. Optionally, garnish with red chili pepper flakes and fresh parsley. Serve the chicken and vegetables immediately.

Notes

For a spicier kick, increase the amount of Cajun seasoning or red chili pepper flakes. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
