  • 1 pound ground beef
  • 1 pound ground chicken sausage
  • 0.5 cup panko crumbs
  • 1 whole egg
  • 1 tablespoon fresh ginger, grated or 1 1/2 teaspoons ground ginger
  • 3 cloves garlic, chopped
  • 0.25 cup low-sodium soy sauce
  • 0.5 cup onion, chopped use the whites of green onions and save the tops for garnish
  • 0.5 cup water chestnuts, chopped 1 can, drained
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground pepper

Instructions
 

  • Preheat your oven to 400°F (200°C). Lightly spray an 8 x 4 inch loaf pan with non-stick spray.
  • In a large bowl, combine the ground beef, ground chicken sausage, panko crumbs, egg, ginger, garlic, soy sauce, onion, water chestnuts, salt, and pepper. Use your hands to mix everything together until well combined.
  • Transfer the meat mixture into the prepared loaf pan, shaping it into a loaf.
  • In a small bowl, mix together all the glaze ingredients: barbecue sauce, ketchup, soy sauce, ginger, and brown sugar. Pour the glaze over the uncooked meatloaf, spreading it evenly.
  • Bake in the preheated oven for about 50 minutes, or until the internal temperature reaches 165°F (74°C).
  • Once done, let the meatloaf cool for 10 minutes before carefully removing it from the pan.
  • Serve with white rice and steamed broccoli for a delicious meal!

Notes

For added flavor, consider mixing in some chopped herbs like parsley or cilantro. You can substitute the ground chicken sausage with any other sausage of your choice for a different taste.
