shredded rotisserie chicken

chipotle peppers in adobo sauce, chopped

cilantro, chopped

Peppadew peppers, chopped

Instructions
Mix the chopped chipotle peppers in adobo with mayo in a small bowl and set aside.
Slice the flat loaves of focaccia into 8 square pieces.
Spread the chipotle mayo on each slice of bread.
On half of the slices, layer cheese, avocado slices, shredded chicken, cilantro, and peppers.
Top with the remaining slices of bread to form sandwiches.
Heat a skillet over medium-high heat and place the sandwiches in the skillet.
Cook for 2-3 minutes, then carefully flip them with a spatula and cook for an additional 2 minutes.
Tilt the pan to the side and pour in the water. Cover the skillet and let the sandwiches steam for 1 minute until the water evaporates.
Remove the cover and serve the paninis hot.
Notes
For a spicier kick, add more chipotle peppers. You can also customize with your favorite cheese or bread.
