Ingredients
  

Main Ingredients

  • 2 loaves garlic herb focaccia bread
  • 6 oz shredded rotisserie chicken
  • 1 medium avocado, sliced
  • 0.25 cup mayo
  • 6 peppers chipotle peppers in adobo sauce, chopped
  • 0.25 cup cilantro, chopped
  • 0.25 cup Peppadew peppers, chopped
  • 4 oz sliced gouda cheese
  • 2 tablespoons water

Instructions
 

  • Mix the chopped chipotle peppers in adobo with mayo in a small bowl and set aside.
  • Slice the flat loaves of focaccia into 8 square pieces.
  • Spread the chipotle mayo on each slice of bread.
  • On half of the slices, layer cheese, avocado slices, shredded chicken, cilantro, and peppers.
  • Top with the remaining slices of bread to form sandwiches.
  • Heat a skillet over medium-high heat and place the sandwiches in the skillet.
  • Cook for 2-3 minutes, then carefully flip them with a spatula and cook for an additional 2 minutes.
  • Tilt the pan to the side and pour in the water. Cover the skillet and let the sandwiches steam for 1 minute until the water evaporates.
  • Remove the cover and serve the paninis hot.

Notes

For a spicier kick, add more chipotle peppers. You can also customize with your favorite cheese or bread.
