  • 2 tablespoons olive oil divided
  • 1 cup yellow onion halved and thinly sliced
  • 1 cup red bell pepper thinly sliced
  • 1 cup green bell pepper thinly sliced
  • 1.25 pounds boneless skinless chicken breasts thinly sliced
  • 1.5 teaspoons Italian seasoning
  • 0.5 teaspoon smoked paprika
  • 1 cup shredded provolone cheese

Instructions
 

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced peppers, onion, salt, and pepper. Sauté until tender, about 5-7 minutes, then transfer to a plate. Tip: Make sure to stir occasionally to prevent burning.
  • Add the remaining olive oil to the skillet. Place the sliced chicken in the skillet and season with Italian seasoning, smoked paprika, salt, and pepper. Let it cook without moving for about 5 minutes to brown the chicken. Tip: This helps develop a nice crust on the chicken.
  • Cook the chicken until fully done, about 5-7 more minutes. Then return the sautéed onions, peppers, and any juices back to the skillet. Mix well and top with shredded provolone cheese.
  • Cover the skillet with a lid until the cheese melts, about 2-3 minutes. Serve hot, and enjoy your delicious Chicken Cheesesteak Skillet! Tip: You can serve this over rice, pasta, or with crusty bread for a complete meal.
